“The more and more I get into this Caritas job, the more I realize that there are tons of renegade farmers around the Mid-South who are intensely passionate about what they do and who want to make a living selling their stuff to restaurants. I knew we had a pretty amazing farm to table/restaurant culture in the last few years but it's blowing up big time now. We've been inundated recently with the best produce we've ever tasted; sun-warm tomatoes so full of flavor they elicit involuntary groans of delight, intensely floral raw honeys harvested in the neighborhood, and ridiculously tasty cheeses too-- Miles Tamboli buffalo mozzarella, fresh ricotta and burrata will make you smile. From our buddy Richard A Simmons who produces the craziest and best tasting heirloom products I've ever eaten to Jim at McMerton Community Gardens in our Binghampton neighborhood who gives us amazing asparagus, blackberries, purple hull peas and okra to badass Mike Larrivee who, in addition to being good for the planet by his very existence and work with Compost Fairy, hand harvests the aforementioned honey. In addition to the big name farms that are currently selling to restaurants, there are people pulling delicious things out of 1/2 acres, 1/4 acre plots-- some even out of the their house (ask me about Karen Taylor, owner of Fresh Greens Farm). It’s our duty as cooks to honor these people.
A fortuitous conversation with an old chef buddy was the impetus for these dinners so I think it's only right that we get to put the dream into motion together. Chef Fortunato Oliva will be manning the stove with me for the first few dinners so you're in for a treat. He was Erling Jensen's Chef de Cuisine and has worked in various Memphis kitchens. He's dying to get back behind the stove, so the food should be pretty amazing.
